Oh wow this stuff is good!
I came up with this recipe one day when I needed some caramel sauce for a recipe, but my stovetop was covered in trays of cooling baked goods (what a wonderful problem to have!).
The end product is rich, sweet and super tasty!
I add extra salt sometimes to make a salted caramel sauce. YUM!
Recipe
Ingredients:
1/4 cup of butter salted or unsalted
1/4 cup of powdered gentle sweet (or equivalent)
1/2 tsp of black strap molasses
1/2 cup of heavy cream
1/2 tsp vanilla
Salt to taste
Directions:
- Melt your butter in a microwave-safe bowl or jug.
- Add in the sweetener, molasses and cream. Stir well.
- Microwave on high for 2 mins.
- Stir and microwave on high for another 2 mins. It will be bubbly and be a caramel colour.
- Stir in the vanilla and salt.
NOTES:
1) For a darker thicker sauce keep microwaving it in 1-minute increments, stirring well in between. I have gone as far as 7 mins to achieve the depth of color and flavor I have wanted.
2) If your sauce splits, don't stress! Just add another 2 tbsp of cream and beat it like crazy with a hand mixer! It will come back together, just keep mixing!
3) If you leave this in the fridge it will firm up, if you want it runny again, gently heat it.
We love this on top of THM friendly ice cream or on top of cookies. This is also good stirred into yogurt. For a cross-over snack you could dip apples into it!

This looks awesome, but I have two questions...1) Do you use salted or unsalted butter? and 2) Is it table cream at 18% fat or whipping/heavy cream at 36% fat?
ReplyDeleteAh sorry here in NZ we only have 1 kind of cream. It's heavy whipping cream. Yup my butter is salted. Thanks!!
